Culinary lexicon in the Casa de Arcos’ Cookery and Confectionery Account Book (1750)

This research focuses on a document found in the Archivo Histórico de la Nobleza: an account book of the kitchen and pastry expenses of the Casa de Arcos in 1750, where the purchased products and some culinary preparations are listed. Our purpose is twofold: to make known unpublished archival collections and study its documented specialty lexicon to contrast it with other lexicographic sources from that period and analyse it according to the methodology of historical lexicography. Particularly, we aim at organizing the documented specialty terms in order to revise their presence, treatment and evolution in the Spanish lexicographic tradition. We focus especially on the words artalete, chuleta, hojaldre, picatoste and tallarín.
